The language used in GRE, both verbal and quant, is indeed tricky. I’d rather like to call it convoluted. ETS likes to use complex sentence structures.
First of all, if you face the problem under timed conditions only, it might be due to timed pressure. Try and do untimed practice.
If you have this issue under untimed conditions as well, I’d suggest focusing on the subject and main verb of a sentence. If you have trouble finding the subject and main verb, I’d suggest you take Greg’s classes related to “Parsing Sentences” (i.e. breaking a sentence into its pieces).
I too once struggled with the same problem but after doing some drills from a High School English Grammar and Composition Book by Wren and Martin (if you’re from India/Pakistan, you probably know what I am talking about), my skill of “deciphering sentences” drastically improved. You can use that book as well. But I’d suggest you take Greg’s classes since they are fun to watch. BEST OF LUCK.
