Percent increase in someone's "GRE Score"

If someone increases their GRE score from 320 to 337, what would be the percent increase in the GRE score?

Greg discussed this problem in Data Dedicated Session 8 in the two-month plan. This is what he suggested.

But the GRE score does not start from 0. Instead, it starts from 260.

The right approach totally confused me. Could someone please go into more depth? Why is starting from zero so important?
